    I have been eating a lot more veggies this year and love my new spiralizer. I have to say that the veggie tian I made at Christmas was a super easy recipe and I need to make it again.

      I have a spiraler and used it once but it didn’t work well. I need to try it again.

    I love roasted veggies, too! It’s how I learned to like broccoli. Do you have a ratio you use – meaning how many cups of veggies, to olive oil, to temperature, to time roasting?

    The last time, I followed an online recipe, but still burned my broccoli!

      It depends. About 350 degrees for 20 minutes, I check it and then roast a little longer if needed. I also started separating certain veggies on two different trays and taking out the ones that bake faster (like thin sweet potato slices and broccoli) and letting the other stuff roast longer.

      I tend to use coconut oil spray from Trader Joe’s instead of olive oil.
