I’ve developed an intolerance to garlic, onion, shallots, leeks, etc. So, we’ve been experimenting with recipes to some nice depth of flavor without being able to use those ingredients. While it’s taken a little while to get there, I think my husband finally perfected it! Unfortunately, he’s also one of those people that doesn’t really follow a recipe. That is definitely not how I cook 😉

I’m sorry about the intolerance! I bet that makes a lot of cooking a challenge.
I’m like you — I need a recipe. And maybe that’s because I’m more of a baker than a cook and baking definitely requires you follow a recipe to the T.

Over the summer, I tested a recipe for Cook’s Illustrated for meatballs and marinara. It made 12 cups of sauce which is enough to feed a crowd. Since it is just two of us, I froze smaller portions so we’d have easy weeknight meals, just like you did.
I should make another batch over the weekend to restock the freezer.

Smart. I think we need to make this a habit when making sauces–just double it and freeze half!

I don’t have a favorite pasta sauce recipe. We often just do the doctored up stuff throwing it together with canned tomatoes LOL!
