    What is in the “mcmuffin?” I see egg and sausage but can’t make out the rest.

      It’s two scrambled eggs put into a metal ring to make them round, for the “muffin” part, then there’s a sausage patty, some shredded cheese and hot sauce. That’s it.

    It sounds like you are doing great–except for the part when you beat up on yourself for having some Halloween candy. Treats for special occasions; healthy eating most of the time! Exactly as you described! And the shredded chicken lunch sounds very appealing. I really need to try cauliflower rice–maybe next time I’m in Trader Joe’s I’ll pick up a package of it. Thanks for the idea.

      Thanks for the support. I know I shouldn’t beat myself up for it but it’s hard mentally!

      I am kind of loving the cauliflower rice. It’s very versatile and similar to rice. I can see myself making a lot of “bowls” with it for lunches. Trader Joe’s version is a lot cheaper than my local grocery store, too. I wonder if you can buy several bags and freeze them for later or if it will make them mushy?

        I always freeze my cauliflower rice! I have to whip some up – thanks for the reminder. Check out the Skinnytaste website she has a ton of different recipes on there. I’ve made the Mexican and Asian ones

          That’s awesome! Thanks! So glad to hear it. I can’t go to Trader Joe’s every week, so it would be nice to have a stock in the freezer.
