    I love black beans, corn, avocado, red onion, tomato, cilantro, and lime juice with a little salt and pepper. Lately i’ve been really into lettuce-less salads because in my head they feel more filling. πŸ™‚

    That’s one fine-lookin onion! I use sweet vidalias in my Mexican dishes like enchiladas and picante chicken — which is really easy – I just cook some chicken, then saute onion and garlic, and throw that in with the chicken, then add chicken stock and salsa to THAT, and simmer a cup of uncooked rice in it until the rice is done. Last night I made a dish with quinoa and cilantro lime dressing – that would also be great with a little Spanish onion thrown in.

    Another really really big congrats on the run – you deserve a few days off!
