{"id":12066,"date":"2011-01-20T11:11:44","date_gmt":"2011-01-20T19:11:44","guid":{"rendered":"http:\/\/www.110pounds.com\/?p=12066"},"modified":"2011-01-20T11:11:34","modified_gmt":"2011-01-20T19:11:34","slug":"french-onion-soup-2","status":"publish","type":"post","link":"https:\/\/www.110pounds.com\/?p=12066","title":{"rendered":"French Onion Soup"},"content":{"rendered":"<blockquote>\n<h2><span style=\"color: #000080;\">French Onion Soup <a href=\"http:\/\/simplyrecipes.com\/recipes\/french_onion_soup\/\">Recipe<\/a><\/span><\/h2>\n<div id=\"recipe-ingredients\">\n<h3><span style=\"color: #000080;\">Ingredients<\/span><\/h3>\n<ul>\n<li><span style=\"color: #000080;\">6 large red or yellow onions, peeled and thinly sliced.<\/span><\/li>\n<li><span style=\"color: #000080;\">Olive oil<\/span><\/li>\n<li><span style=\"color: #000080;\">1\/4 teaspoon of sugar<\/span><\/li>\n<li><span style=\"color: #000080;\">2 cloves garlic, minced<\/span><\/li>\n<li><span style=\"color: #000080;\">8 cups of beef stock, chicken stock, or a combination of the two (traditionally the soup is made with beef stock)<\/span><\/li>\n<li><span style=\"color: #000080;\">1\/2 cup of dry vermouth or dry white wine<\/span><\/li>\n<li><span style=\"color: #000080;\">1 bay leaf<\/span><\/li>\n<li><span style=\"color: #000080;\">1\/4 teaspoon of dry thyme<\/span><\/li>\n<li><span style=\"color: #000080;\">Salt and pepper<\/span><\/li>\n<li><span style=\"color: #000080;\">8 slices of toasted French bread<\/span><\/li>\n<li><span style=\"color: #000080;\">1 1\/2 cups of grated Swiss Gruyere with a little grated Parmesan cheese<\/span><\/li>\n<\/ul>\n<\/div>\n<div id=\"recipe-method\">\n<h3><span style=\"color: #000080;\">Directions<\/span><\/h3>\n<p><span style=\"color: #000080;\"><strong>1<\/strong> In a large saucepan, saut\u00e9 the onions in the olive  oil on  medium high heat until well browned, but not burned, about 30-40   minutes (or longer).  Add the sugar about 10 minutes into the process to   help with the carmelization.<\/span><\/p>\n<p><span style=\"color: #000080;\"><strong>2<\/strong> Add garlic and saut\u00e9 for 1 minute.  Add the stock, vermouth   or wine, bay leaf, and thyme.  Cover partially and simmer until the   flavors are well blended, about 30 minutes.  Season to taste with salt   and pepper.  Discard the bay leaf.<\/span><\/p>\n<p><span style=\"color: #000080;\"><strong>3<\/strong> To serve you can either use individual oven-proof soup bowls   or one large casserole dish.  Ladle the soup into the bowls or   casserole dish.  Cover with the toast and sprinkle with cheese.  Put   into the broiler for 10 minutes at 350 degrees F, or until the cheese   bubbles and is slightly browned. Everyone needs a little pampering once in awhile. And then barf. Michael added the wine to the onions, plus the garlic. Then he poured it all into the pot of beef broth. It was delicious! I loved the soup. We halved the recipe and I think the ratio of broth to onion was a little off. Next time I&#8217;d had maybe half a cup more of broth to the mixture.<\/p>\n<p>I think the soup will be even better as leftovers the next day. The flavors were really rich and sweet.
