Add the onion and carrots and cook, stirring occasionally, until soft, 6                      to 8 minutes.<\/span><\/p>\n<p><span style=\"color: #003366;\">2.\u00a0Add the garlic and curry powder and cook, stirring, until fragrant, 2 minutes.<\/span><\/p>\n<p><span style=\"color: #003366;\">3.\u00a0Add the rice, 2\u00bd cups water, and \u00bd teaspoon each salt and pepper and bring to a boil. Reduce heat and simmer, covered, for                      15 minutes.<\/span><\/p>\n<p><span style=\"color: #003366;\">4.\u00a0Season the shrimp with \u00bd teaspoon salt and \u00bc teaspoon pepper. Nestle them in the partially cooked rice. Cover and cook until                      the shrimp are opaque throughout, 4 to 5 minutes. Fold in the basil.<\/span><\/p>\n<p><span style=\"color: #003366;\">Tip: Upgrade this Indian-inspired dish with basmati rice, a fragrant long-grain variety with a delicate, fluffy texture.<\/span><\/p><\/blockquote>\n<p>Back from vacation and no food in the house = time for an easy dinner. This recipe had been in my Meal Planning list for awhile but I never got around to making it. Last night I made it for dinner since it was the one thing I had all the ingredients for. If you follow me on <a href=\"http:\/\/twitter.com\/#!\/LisaEirene\">Twitter<\/a>, you probably read my rant about brown rice last night.<\/p>\n<p>Usually I use my<a href=\"http:\/\/www.110pounds.com\/?p=8284\"> rice cooker<\/a> when I cook rice. It turns out so much better but this recipe was a little different and I couldn&#8217;t use my cooker. All I had was brown rice, too. I knew this would prove to be a challenge.<\/p>\n<p><a href=\"http:\/\/www.110pounds.com\/wp-content\/uploads\/2011\/03\/IMG_6241.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-15203\" title=\"IMG_6241\" src=\"http:\/\/www.110pounds.com\/wp-content\/uploads\/2011\/03\/IMG_6241-300x225.jpg\" alt=\"\" width=\"300\" height=\"225\" srcset=\"https:\/\/www.110pounds.com\/wp-content\/uploads\/2011\/03\/IMG_6241-300x225.jpg 300w, https:\/\/www.110pounds.com\/wp-content\/uploads\/2011\/03\/IMG_6241-1024x768.jpg 1024w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/a><br \/>\nI made us salads to tide us over until dinner was ready. The recipe called for adding the shrimp when the rice was &#8220;almost&#8221;   cooked. That was the challenge. The rice ended up taking almost an hour.<\/p>\n<p>Once the rice was &#8220;almost&#8221; cooked (a little liquid was still in it but the rice itself was less crunchy) I added the shrimp.<\/p>\n<p><a href=\"http:\/\/www.110pounds.com\/wp-content\/uploads\/2011\/03\/IMG_6242.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-15204\" title=\"IMG_6242\" src=\"http:\/\/www.110pounds.com\/wp-content\/uploads\/2011\/03\/IMG_6242-300x225.jpg\" alt=\"\" width=\"300\" height=\"225\" srcset=\"https:\/\/www.110pounds.com\/wp-content\/uploads\/2011\/03\/IMG_6242-300x225.jpg 300w, https:\/\/www.110pounds.com\/wp-content\/uploads\/2011\/03\/IMG_6242.jpg 640w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/a><br \/>\nI cooked it about 10 more minutes and the shrimp were cooked so I served. I scooped out servings with a 1 cup measuring cup to make sure I was <a href=\"http:\/\/www.110pounds.com\/?p=54\">accurate<\/a>.<\/p>\n<p><a href=\"http:\/\/www.110pounds.com\/wp-content\/uploads\/2011\/03\/IMG_6244.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-15206\" title=\"IMG_6244\" src=\"http:\/\/www.110pounds.com\/wp-content\/uploads\/2011\/03\/IMG_6244-300x225.jpg\" alt=\"\" width=\"300\" height=\"225\" srcset=\"https:\/\/www.110pounds.com\/wp-content\/uploads\/2011\/03\/IMG_6244-300x225.jpg 300w, https:\/\/www.110pounds.com\/wp-content\/uploads\/2011\/03\/IMG_6244-1024x768.jpg 1024w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/a><br \/>\nI did not have fresh basil to add to the recipe. The flavors were rich and a bit spicy. The shrimp wasn&#8217;t overcooked (the rice was almost perfectly cooked) and I liked the veggies. If I hadn&#8217;t chopped the onion myself, I never would have guessed there was onion in the recipe though.<\/p>\n<p>I would make this recipe again with some changes.
