I guess I just assumed we&#8217;d plant and then the work was done. Boy was I wrong. Recently I wrote about <a href=\"http:\/\/www.110pounds.com\/?p=20265\">things I learned for next year&#8217;s garden<\/a>. It&#8217;s been a learning process every step of the way.<\/p>\n<p>One of the big things I should have done is make a gardening calender for when I planted the crops, and when they <em>should<\/em>\u00a0be ready for harvesting. Next year! I&#8217;ve been reading gardening books and consulting Google for advice on when my crops are ready&#8211;and HOW to harvest them.<\/p>\n<h4><span style=\"color: #008000;\"><strong>LETTUCE<\/strong><\/span><\/h4>\n<p>I just cut off the leaves, wash them and eat them. The lettuce regenerates pretty quickly, so we always have lettuce. I don&#8217;t think there&#8217;s anything I can do to prevent that next year, unfortunately.<\/p>\n<h4><span style=\"color: #008000;\"><strong>ONIONS<\/strong><\/span><\/h4>\n<p>Apparently onions can be picked at any stage but the thing to look for is the leaves to lose their color and flop over. \u00a0The instructions were to pull the onions up on a sunny day and let them sit in the sun for another day or so to dry. This drying kills the root system at the bottom of each bulb. The roots will be like little brittle wires when they&#8217;re dry.\u00a0Onions are ready when the skins rattle and the roots are dry and wiry.<\/p>\n<p><a href=\"http:\/\/www.110pounds.com\/wp-content\/uploads\/2011\/08\/IMG_9594.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-21705\" title=\"IMG_9594\" src=\"http:\/\/www.110pounds.com\/wp-content\/uploads\/2011\/08\/IMG_9594-225x300.jpg\" alt=\"\" width=\"225\" height=\"300\" srcset=\"https:\/\/www.110pounds.com\/wp-content\/uploads\/2011\/08\/IMG_9594-225x300.jpg 225w, https:\/\/www.110pounds.com\/wp-content\/uploads\/2011\/08\/IMG_9594-768x1024.jpg 768w\" sizes=\"(max-width: 225px) 100vw, 225px\" \/><\/a><br \/>\nI pulled one really early and it tasted great&#8211;it was small, but tasty.<\/p>\n<h4><span style=\"color: #008000;\"><strong>SQUASH<\/strong><\/span><\/h4>\n<p>There are so many different kinds of squashes, and apparently different rules for all of them. For example, summer squash should be harvested when still tender and slightly &#8220;immature&#8221; but winter squash needs to be &#8220;fully matured.&#8221; <em>How the heck do I know the difference?! <\/em>I planted acorn squash.<\/p>\n<p>Squash before:<\/p>\n<p><a href=\"http:\/\/www.110pounds.com\/wp-content\/uploads\/2011\/07\/squash.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-20603\" title=\"squash\" src=\"http:\/\/www.110pounds.com\/wp-content\/uploads\/2011\/07\/squash-300x225.jpg\" alt=\"\" width=\"300\" height=\"225\" srcset=\"https:\/\/www.110pounds.com\/wp-content\/uploads\/2011\/07\/squash-300x225.jpg 300w, https:\/\/www.110pounds.com\/wp-content\/uploads\/2011\/07\/squash.jpg 640w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p>Acorn squash is a winter squash (who knew?) and needs to be harvested when the rinds are tough.\u00a0The easiest way to know when to harvest: it&#8217;s dark green in color and hard. This is where a gardening calender would have come in handy because the squash takes between 80-100 days to ripen.<\/p>\n<p>Squash after:<\/p>\n<p><a href=\"http:\/\/www.110pounds.com\/wp-content\/uploads\/2011\/09\/IMG_0606.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-23617\" title=\"IMG_0606\" src=\"http:\/\/www.110pounds.com\/wp-content\/uploads\/2011\/09\/IMG_0606-300x225.jpg\" alt=\"\" width=\"300\" height=\"225\" srcset=\"https:\/\/www.110pounds.com\/wp-content\/uploads\/2011\/09\/IMG_0606-300x225.jpg 300w, https:\/\/www.110pounds.com\/wp-content\/uploads\/2011\/09\/IMG_0606-1024x768.jpg 1024w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p>&nbsp;<\/p>\n<h4><strong><span style=\"color: #008000;\">ZUCCHINI<\/span><\/strong><\/h4>\n<p>The zucchini was the biggest surprise. I had no idea the plant would get so big and literally take over the garden. The advice from everyone was: <span style=\"color: #008000;\"><strong>&#8220;pick them young and pick them often.&#8221;<\/strong><\/span> Big zucchini is apparently flavorless or bitter. The zucchini can be picked in the &#8220;baby&#8221; stage and it&#8217;s supposedly sweet. The normal size when picked is 6-7 inches long. Baby zucchini:<\/p>\n<p><a href=\"http:\/\/www.110pounds.com\/wp-content\/uploads\/2011\/07\/zucc.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-20604\" title=\"zucc\" src=\"http:\/\/www.110pounds.com\/wp-content\/uploads\/2011\/07\/zucc-300x225.jpg\" alt=\"\" width=\"300\" height=\"225\" srcset=\"https:\/\/www.110pounds.com\/wp-content\/uploads\/2011\/07\/zucc-300x225.jpg 300w, https:\/\/www.110pounds.com\/wp-content\/uploads\/2011\/07\/zucc.jpg 640w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/a><br \/>\nTo harvest, snip the fruit from the plant with pruners or scissors, or just give the zucchini a bit of a twist; the stem should come away from the rest of the plant easily. It would be tiny on a Tuesday and I&#8217;d get busy and forget to check them until Sunday and all of a sudden they&#8217;d tripled in size! I loved the zucchini. I gave tons away to friends and coworkers, plus we ate a ton of it all summer long.<\/p>\n<h4><strong><span style=\"color: #008000;\">TOMATOES<\/span><\/strong><\/h4>\n<p>These were pretty self-explanatory. When they are red they&#8217;re ready! Our tomato plants grew humongous and a few of them even toppled over because of the weight. There were hundreds of tomatoes growing on the plants. They were delicious and sweet, tender and more amazing than anything I&#8217;ve bought in a store.<\/p>\n<p><a href=\"http:\/\/www.110pounds.com\/wp-content\/uploads\/2011\/08\/TOMATOES.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-22514\" title=\"TOMATOES\" src=\"http:\/\/www.110pounds.com\/wp-content\/uploads\/2011\/08\/TOMATOES-e1314298823223-225x300.jpg\" alt=\"\" width=\"225\" height=\"300\" srcset=\"https:\/\/www.110pounds.com\/wp-content\/uploads\/2011\/08\/TOMATOES-e1314298823223-225x300.jpg 225w, https:\/\/www.110pounds.com\/wp-content\/uploads\/2011\/08\/TOMATOES-e1314298823223.jpg 480w\" sizes=\"(max-width: 225px) 100vw, 225px\" \/><\/a><br \/>\nOnce the tomatoes all came to fruition I had to become creative with ways to use them:<\/p>\n<ul>\n<li>Mozzarella, basil and tomato salads (my favorite)<\/li>\n<li>Tomatoes on green salads<\/li>\n<li>Homemade salsa<\/li>\n<li>Marinara sauce<\/li>\n<\/ul>\n<p><a href=\"http:\/\/www.110pounds.com\/wp-content\/uploads\/2011\/09\/IMG_0068.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-23614\" title=\"IMG_0068\" src=\"http:\/\/www.110pounds.com\/wp-content\/uploads\/2011\/09\/IMG_0068-300x225.jpg\" alt=\"\" width=\"300\" height=\"225\" srcset=\"https:\/\/www.110pounds.com\/wp-content\/uploads\/2011\/09\/IMG_0068-300x225.jpg 300w, https:\/\/www.110pounds.com\/wp-content\/uploads\/2011\/09\/IMG_0068-1024x768.jpg 1024w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p>Lots of yummy options!<\/p>\n<h4><strong><span style=\"color: #008000;\">PEPPERS<\/span><\/strong><\/h4>\n<p>I was really looking forward to harvesting this little guy: <strong><\/strong><\/p>\n<p><a href=\"http:\/\/www.110pounds.com\/wp-content\/uploads\/2011\/08\/IMG_9593.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-21707\" title=\"IMG_9593\" src=\"http:\/\/www.110pounds.com\/wp-content\/uploads\/2011\/08\/IMG_9593-300x225.jpg\" alt=\"\" width=\"300\" height=\"225\" srcset=\"https:\/\/www.110pounds.com\/wp-content\/uploads\/2011\/08\/IMG_9593-300x225.jpg 300w, https:\/\/www.110pounds.com\/wp-content\/uploads\/2011\/08\/IMG_9593-1024x768.jpg 1024w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/a><br \/>\nFor months I watched him grow,\u00a0 plump up, turn a golden green. I was excited to see it change colors. So so so sad! \ud83d\ude41<\/p>\n<p><a href=\"http:\/\/www.110pounds.com\/wp-content\/uploads\/2011\/09\/IMG_0575.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-23615\" title=\"IMG_0575\" src=\"http:\/\/www.110pounds.com\/wp-content\/uploads\/2011\/09\/IMG_0575-225x300.jpg\" alt=\"\" width=\"225\" height=\"300\" srcset=\"https:\/\/www.110pounds.com\/wp-content\/uploads\/2011\/09\/IMG_0575-225x300.jpg 225w, https:\/\/www.110pounds.com\/wp-content\/uploads\/2011\/09\/IMG_0575-768x1024.jpg 768w\" sizes=\"(max-width: 225px) 100vw, 225px\" \/><\/a><\/p>\n<p>Luckily one survived the slugs and I was able to enjoy my pepper.<\/p>\n<p>&nbsp;<\/p>\n<h4><span style=\"color: #008000;\"><strong>JALAPENOS<\/strong><\/span><\/h4>\n<p>Michael had done tomatoes and jalapenos before and they were successful. We did jalapenos this summer to go with our tomatoes and (what I thought was) cilantro to make salsa.<\/p>\n<p><a href=\"http:\/\/www.110pounds.com\/wp-content\/uploads\/2011\/08\/IMG_9595.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-21708\" title=\"IMG_9595\" src=\"http:\/\/www.110pounds.com\/wp-content\/uploads\/2011\/08\/IMG_9595-300x225.jpg\" alt=\"\" width=\"300\" height=\"225\" srcset=\"https:\/\/www.110pounds.com\/wp-content\/uploads\/2011\/08\/IMG_9595-300x225.jpg 300w, https:\/\/www.110pounds.com\/wp-content\/uploads\/2011\/08\/IMG_9595-1024x768.jpg 1024w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/a><br \/>\nWe chopped up the jalapenos and put them in a lot of things&#8211;turkey burgers, salsa, everything. They were tiny but delicious.<\/p>\n<p><a href=\"http:\/\/www.110pounds.com\/wp-content\/uploads\/2011\/09\/jalapeno.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-23616\" title=\"jalapeno\" src=\"http:\/\/www.110pounds.com\/wp-content\/uploads\/2011\/09\/jalapeno-300x225.jpg\" alt=\"\" width=\"300\" height=\"225\" srcset=\"https:\/\/www.110pounds.com\/wp-content\/uploads\/2011\/09\/jalapeno-300x225.jpg 300w, https:\/\/www.110pounds.com\/wp-content\/uploads\/2011\/09\/jalapeno-1024x768.jpg 1024w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/a><br \/>\nFinally, the herbs I planted were massive. They flourished and I didn&#8217;t really have the opportunity to use them as much as I wanted to. I wish I had been on top of things to make a bunch of pesto with the basil to freeze.
