{"id":20751,"date":"2011-07-30T12:26:05","date_gmt":"2011-07-30T19:26:05","guid":{"rendered":"http:\/\/www.110pounds.com\/?p=20751"},"modified":"2011-07-27T08:53:58","modified_gmt":"2011-07-27T15:53:58","slug":"potluck-recipe-2-jalapeno-corn-muffins","status":"publish","type":"post","link":"https:\/\/www.110pounds.com\/?p=20751","title":{"rendered":"Potluck Recipe 2: Jalapeno Corn Muffins"},"content":{"rendered":"<p>I saw this recipe when I was doing some research for another recipe and it sounded so good that I had to try it.<\/p>\n<blockquote>\n<h3><span style=\"color: #000080;\"><a href=\"http:\/\/www.foodnetwork.com\/recipes\/emeril-lagasse\/jalapeno-corn-muffins-recipe2\/index.html\"><span style=\"color: #000080;\">Jalapeno Corn Muffins<\/span><\/a><\/span><\/h3>\n<p><span style=\"color: #000080;\">from Emeril Lagasse<\/span><\/p>\n<h2><span style=\"color: #000080;\">Ingredients<\/span><\/h2>\n<ul>\n<li><span style=\"color: #000080;\">2 tablespoons unsalted butter<\/span><\/li>\n<li><span style=\"color: #000080;\">1\/3 cup finely chopped onions<\/span><\/li>\n<li><span style=\"color: #000080;\">1 cup fresh corn kernels<\/span><\/li>\n<li><span style=\"color: #000080;\">3\/4 teaspoon plus\u00a0pinch\u00a0salt<\/span><\/li>\n<li><span style=\"color: #000080;\">1 cup all-purpose flour<\/span><\/li>\n<li><span style=\"color: #000080;\">1 cup yellow cornmeal<\/span><\/li>\n<li><span style=\"color: #000080;\">1 tablespoon baking powder<\/span><\/li>\n<li><span style=\"color: #000080;\">Pinch\u00a0cayenne pepper<\/span><\/li>\n<li><span style=\"color: #000080;\">1\/3 cup shredded\u00a0Cheddar<\/span><\/li>\n<li><span style=\"color: #000080;\">1 cup buttermilk<\/span><\/li>\n<li><span style=\"color: #000080;\">1\/4 cup vegetable oil<\/span><\/li>\n<li><span style=\"color: #000080;\">2 large\u00a0eggs, lightly beaten<\/span><\/li>\n<li><span style=\"color: #000080;\">1 tablespoon minced seeded green jalapenos<\/span><\/li>\n<li><span style=\"color: #000080;\">1 tablespoon minced seeded red jalapenos<\/span><\/li>\n<li><span style=\"color: #000080;\">3 tablespoons honey<\/span><\/li>\n<\/ul>\n<\/blockquote>\n<div>\n<blockquote>\n<h2><span style=\"color: #000080;\">Directions<\/span><\/h2>\n<\/blockquote>\n<div>\n<blockquote><p><span style=\"color: #000080;\">Preheat the oven to 375 degrees F. Lightly\u00a0grease\u00a014 regular sized muffin tin cups.<\/span><\/p>\n<p><span style=\"color: #000080;\">In a small skillet,\u00a0melt\u00a0the butter over medium-low heat. Add the onions and cook until soft and golden brown, 3 to 4 minutes. Add the corn and a pinch of salt and cook 3 to 4 minutes, stirring occasionally. Remove from the heat and set aside to cool.<\/span><\/p>\n<p><span style=\"color: #000080;\">In a large bowl, stir together the flour,\u00a0cornmeal, baking powder, salt, cayenne pepper, and\u00a0cheese. In a second bowl,\u00a0whisk\u00a0together the buttermilk, oil, eggs, jalapenos, and\u00a0honey. Add the buttermilk mixture to the flour mixture, stirring just until moistened. Stir in the cooled onions and corn.<\/span><\/p>\n<p><span style=\"color: #000080;\">Spoon the\u00a0batter\u00a0into the prepared tins, filling 3\/4 of the way full. (If there are empty cups in a tin, fill with water.) Bake the muffins until golden and a toothpick inserted into the center comes out clean, 12 to 15 minutes. The only thing that concerned me was mincing the jalapenos. I don&#8217;t work with peppers much and I had to remind myself often <em>Do Not Rub Your Eyes!<\/em>\u00a0Seems like a no-brainer but when you are busy and distracted, it&#8217;s an easy mistake to make! I&#8217;ve done it with garlic before. \ud83d\ude09 I used rubber gloves just to be on the safe side.<\/p>\n<p><a href=\"http:\/\/www.110pounds.com\/wp-content\/uploads\/2011\/07\/IMG_8276.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-20790\" title=\"IMG_8276\" src=\"http:\/\/www.110pounds.com\/wp-content\/uploads\/2011\/07\/IMG_8276-300x225.jpg\" alt=\"\" width=\"300\" height=\"225\" srcset=\"https:\/\/www.110pounds.com\/wp-content\/uploads\/2011\/07\/IMG_8276-300x225.jpg 300w, https:\/\/www.110pounds.com\/wp-content\/uploads\/2011\/07\/IMG_8276-1024x768.jpg 1024w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p>I read the reviews and almost all of them were good. There were two that said it wasn&#8217;t spicy at all so I considered not trying the recipe. But really, everyone&#8217;s idea of &#8220;this is spicy&#8221; is different, so the only way to find out was to make it myself. And maybe add a little extra cayenne pepper!<\/p>\n<p><a href=\"http:\/\/www.110pounds.com\/wp-content\/uploads\/2011\/07\/IMG_8278.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-20794\" title=\"IMG_8278\" src=\"http:\/\/www.110pounds.com\/wp-content\/uploads\/2011\/07\/IMG_8278-300x225.jpg\" alt=\"\" width=\"300\" height=\"225\" srcset=\"https:\/\/www.110pounds.com\/wp-content\/uploads\/2011\/07\/IMG_8278-300x225.jpg 300w, https:\/\/www.110pounds.com\/wp-content\/uploads\/2011\/07\/IMG_8278.jpg 640w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/a><br \/>\nOne of the good things about this recipe was that it was fast and easy with the Kitchenaid Mixer. I just dumped it all in and mixed it!<\/p>\n<p><a href=\"http:\/\/www.110pounds.com\/wp-content\/uploads\/2011\/07\/IMG_8279.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-20795\" title=\"IMG_8279\" src=\"http:\/\/www.110pounds.com\/wp-content\/uploads\/2011\/07\/IMG_8279-300x225.jpg\" alt=\"\" width=\"300\" height=\"225\" srcset=\"https:\/\/www.110pounds.com\/wp-content\/uploads\/2011\/07\/IMG_8279-300x225.jpg 300w, https:\/\/www.110pounds.com\/wp-content\/uploads\/2011\/07\/IMG_8279.jpg 640w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/a><br \/>\nI added the dry\u00a0ingredients\u00a0to the wet mixture and blended it.<\/p>\n<p><a href=\"http:\/\/www.110pounds.com\/wp-content\/uploads\/2011\/07\/IMG_8280.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-20796\" title=\"IMG_8280\" src=\"http:\/\/www.110pounds.com\/wp-content\/uploads\/2011\/07\/IMG_8280-300x225.jpg\" alt=\"\" width=\"300\" height=\"225\" srcset=\"https:\/\/www.110pounds.com\/wp-content\/uploads\/2011\/07\/IMG_8280-300x225.jpg 300w, https:\/\/www.110pounds.com\/wp-content\/uploads\/2011\/07\/IMG_8280.jpg 640w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/a><br \/>\nWhile it was mixing I cleaned up the kitchen a bit from the precious recipe I was doing.<\/p>\n<p><a href=\"http:\/\/www.110pounds.com\/wp-content\/uploads\/2011\/07\/IMG_8282.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-20799\" title=\"IMG_8282\" src=\"http:\/\/www.110pounds.com\/wp-content\/uploads\/2011\/07\/IMG_8282-300x225.jpg\" alt=\"\" width=\"300\" height=\"225\" srcset=\"https:\/\/www.110pounds.com\/wp-content\/uploads\/2011\/07\/IMG_8282-300x225.jpg 300w, https:\/\/www.110pounds.com\/wp-content\/uploads\/2011\/07\/IMG_8282-1024x768.jpg 1024w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/a><br \/>\nI poured the batter into the cupcake tins and baked them for about 13 minutes before checking them. I added a little butter to the muffin and it was warm and tasty. My only complaint: they weren&#8217;t spicy. Like at all.<\/p>\n<p><a href=\"http:\/\/www.110pounds.com\/wp-content\/uploads\/2011\/07\/IMG_8285.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-20803\" title=\"IMG_8285\" src=\"http:\/\/www.110pounds.com\/wp-content\/uploads\/2011\/07\/IMG_8285-300x225.jpg\" alt=\"\" width=\"300\" height=\"225\" srcset=\"https:\/\/www.110pounds.com\/wp-content\/uploads\/2011\/07\/IMG_8285-300x225.jpg 300w, https:\/\/www.110pounds.com\/wp-content\/uploads\/2011\/07\/IMG_8285-1024x768.jpg 1024w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/a><br \/>\nI don&#8217;t know if they&#8217;d be spicier with more jalapenos or more cayenne. But it needed something!<\/p>\n<p><a href=\"http:\/\/www.110pounds.com\/wp-content\/uploads\/2011\/07\/IMG_8286.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-20804\" title=\"IMG_8286\" src=\"http:\/\/www.110pounds.com\/wp-content\/uploads\/2011\/07\/IMG_8286-300x225.jpg\" alt=\"\" width=\"300\" height=\"225\" srcset=\"https:\/\/www.110pounds.com\/wp-content\/uploads\/2011\/07\/IMG_8286-300x225.jpg 300w, https:\/\/www.110pounds.com\/wp-content\/uploads\/2011\/07\/IMG_8286-1024x768.jpg 1024w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/a><br \/>\nI took the muffins to the family reunion potluck and about half of them were eaten. I was disappointed they weren&#8217;t all gone but I ate one at the party and since they were cold they weren&#8217;t as good as they had been straight out of the oven. \ud83d\ude41 They were still not spicy either.<\/p>\n<p>Bottom line: the muffins were rather plain, not spicy enough and pretty dense. I wanted spicy and light and fluffy. Oh well!<\/p>\n<p><em><strong>QUESTION: Do you ever make muffins?
