Ooops.<\/p>\n<blockquote>\n<h3><span style=\"color: #000080;\">Eggplant and Zucchini Napoleon<\/span><\/h3>\n<p><span style=\"color: #000080;\"><a href=\"http:\/\/cheese.food.com\/recipe\/eggplant-zucchini-napoleon-335121\"><span style=\"color: #000080;\">from food.com<\/span><\/a><\/span><\/p>\n<p><span style=\"color: #000080;\">Nutrition Facts: Serving Size: 1 (351 g) \u00a0\u00a0 |\u00a0\u00a0\u00a0\u00a0 Servings: 6\u00a0\u00a0\u00a0\u00a0 |\u00a0\u00a0\u00a0 Calories 432<\/span><\/p>\n<div>\n<h4><span style=\"color: #000080;\">Ingredients<\/span><\/h4>\n<ul>\n<ul>\n<li><span style=\"color: #000080;\">1 large eggplants<\/span><\/li>\n<li><span style=\"color: #000080;\">3 medium zucchini<\/span><\/li>\n<li><span style=\"color: #000080;\">1\/2 cup olive oil<\/span><\/li>\n<li><span style=\"color: #000080;\">2 tablespoons fresh thyme ( chopped)<\/span><\/li>\n<li><span style=\"color: #000080;\">2 tablespoons fresh oregano ( chopped)<\/span><\/li>\n<li><span style=\"color: #000080;\">1\/2 tablespoon garlic ( minced)<\/span><\/li>\n<li><span style=\"color: #000080;\">12 ounces mozzarella cheese ( sliced)<\/span><\/li>\n<li><span style=\"color: #000080;\">2 cups marinara sauce<\/span><\/li>\n<\/ul>\n<\/ul>\n<\/div>\n<\/blockquote>\n<div>\n<blockquote>\n<h4><span style=\"color: #000080;\">Directions<\/span><\/h4>\n<ol>\n<li><span style=\"color: #000080;\">Preheat oven to 400F &amp; cut eggplant + zucchini into lengthwise slices.<\/span><\/li>\n<li><span style=\"color: #000080;\">Combine olive oil, thyme, organo + garlic &amp; mix well. Lightly brush eggplant &amp; zucchini slices w\/oil mixture.<\/span><\/li>\n<li><span style=\"color: #000080;\">Heat lrg non-stick skillet over med-heat. Cook vegetable slices 30 seconds on ea side.<\/span><\/li>\n<li><span style=\"color: #000080;\">In an 11 x 7-in baking dish, layer eggplant, zucchini, 1 1\/2 cups of the tomato sauce + the cheese. Repeat layering as needed.<\/span><\/li>\n<li><span style=\"color: #000080;\">Bake 10-15 min or till heated through. Cut into 6 servings (approx 3&#215;2 in) &amp; serve immediately w\/approx 1 tbsp of the remaining 1\/2 cup marinara sauce atop ea serving.<\/span><\/li>\n<li><span style=\"color: #000080;\">NOTE: Feel free to sub for the marinara sauce w\/another tomato-based &amp; meatless spaghetti or lasagna sauce of choice.<\/span><\/li>\n<\/ol>\n<\/blockquote>\n<p>The recipe seemed easy enough and I had all the ingredients needed except for the eggplant. I clipped some fresh herbs from my garden. I was right. But it tasted all right. If I was going to make this recipe again I would change a few things: it needs more garlic. Maybe the slices of eggplant and zucchini need to be smaller so it&#8217;s easier to cut.
