Our diet has been pretty simple all summer long, so there wasn\u2019t a need for recipes. We got some lamb at Trader Joe\u2019s and I wanted to find a new recipe for it. I was really searching for a marinade, but when I saw this recipe I had to try it. It sounded delicious! And I needed the protein after <a href=\"http:\/\/www.110pounds.com\/?p=22479\">biking 24 miles<\/a> to and from work on Monday.<\/p>\n<p>Don&#8217;t let the word &#8220;lamb&#8221; scare you off. You can easily substitute the lamb for something else.<\/p>\n<p>&nbsp;<\/p>\n<blockquote>\n<h3><span style=\"color: #000080;\">Tuscan Lamb With Tomatoes and Polenta<\/span><\/h3>\n<p>&nbsp;<\/p>\n<p><span style=\"color: #000080;\"><a href=\"http:\/\/www.realsimple.com\/food-recipes\/browse-all-recipes\/tuscan-lamb-garlicky-tomato-sauce-polenta-recipe-00000000029837\/index.html\">From Real Simple<\/a><\/span><\/p>\n<p><span style=\"color: #000080;\">Serves 4\u00a0\u00a0 |\u00a0\u00a0\u00a0 Hands-on Time: 15m\u00a0\u00a0\u00a0 |\u00a0\u00a0\u00a0 Total Time: 25m<\/span><\/p>\n<p><span style=\"color: #000080;\"><strong>Ingredients<\/strong><\/span><\/p>\n<p><span style=\"color: #000080;\">1\u00a0teaspoon\u00a0olive oil<\/span><\/p>\n<p><span style=\"color: #000080;\">8\u00a0small lamb loin chops (about 3\/4 inch thick; 2 pounds total)<\/span><\/p>\n<p><span style=\"color: #000080;\">kosher salt and black pepper<\/span><\/p>\n<p><span style=\"color: #000080;\">2\u00a0cloves garlic, sliced<\/span><\/p>\n<p><span style=\"color: #000080;\">1\u00a028-ounce can diced tomatoes<\/span><\/p>\n<p><span style=\"color: #000080;\">1\/2\u00a0cup\u00a0dry white wine<\/span><\/p>\n<p><span style=\"color: #000080;\">1\u00a0tablespoon\u00a0fresh rosemary leaves<\/span><\/p>\n<p><span style=\"color: #000080;\">3\/4\u00a0cup\u00a0instant polenta<\/span><\/p>\n<p><span style=\"color: #000080;\">1\u00a0tablespoon\u00a0unsalted butter<\/span><\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"color: #000080;\"><strong>Directions<\/strong><\/span><\/p>\n<p><span style=\"color: #000080;\">1.\u00a0Heat oven to 400\u00b0 F. Heat the oil in a large ovenproof skillet over medium-high heat. Season the chops with \u00bd teaspoon salt and \u00bc teaspoon pepper.<\/span><\/p>\n<p><span style=\"color: #000080;\">2.\u00a0Cook the chops until browned, 2 to 3 minutes per side. Transfer to a plate. Discard all but 1 tablespoon of the drippings.<\/span><\/p>\n<p><span style=\"color: #000080;\">3.\u00a0Add the garlic to the drippings and cook, stirring, until fragrant, 30 seconds. Add the tomatoes, wine, rosemary, and \u00bc teaspoon each salt and pepper; bring to a boil. Reduce heat and simmer until the sauce begins to thicken, 2 to 3 minutes.<\/span><\/p>\n<p><span style=\"color: #000080;\">4.\u00a0Nestle the chops in the tomatoes, transfer the skillet to oven, and cook, 10 to 12 minutes for medium-rare.<\/span><\/p>\n<p><span style=\"color: #000080;\">5.\u00a0Meanwhile, in a medium saucepan, bring 3 cups water to a boil. Gradually whisk in the polenta. Cook, whisking frequently, until thickened, 3 to 4 minutes.<\/span><\/p>\n<p><span style=\"color: #000080;\">6.\u00a0Whisk in the butter, \u00bd teaspoon salt, and 1\/8 teaspoon pepper. Serve with the chops and tomato sauce.<\/span><\/p>\n<p><span style=\"color: #000080;\"><strong>Tip: <\/strong>Polenta, coarsely ground cornmeal, is an Italian staple. The instant version cooks in less than 5 minutes, versus 45 minutes for regular polenta. I didn&#8217;t think using the one can I had of diced tomatoes with jalapenos would go with this recipe&#8230;I couldn\u2019t find the \u201cinstant polenta\u201d but the package I bought had a microwave option. I was skeptical but it was late in the evening and it was the only option.<\/p>\n<p><a href=\"http:\/\/www.110pounds.com\/wp-content\/uploads\/2011\/08\/IMG_0110.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-22727\" title=\"IMG_0110\" src=\"http:\/\/www.110pounds.com\/wp-content\/uploads\/2011\/08\/IMG_0110-225x300.jpg\" alt=\"\" width=\"225\" height=\"300\" srcset=\"https:\/\/www.110pounds.com\/wp-content\/uploads\/2011\/08\/IMG_0110-225x300.jpg 225w, https:\/\/www.110pounds.com\/wp-content\/uploads\/2011\/08\/IMG_0110-768x1024.jpg 768w\" sizes=\"(max-width: 225px) 100vw, 225px\" \/><\/a><br \/>\nI followed the microwave instructions and it turned out great! Perfect consistency and everything. Having a digital meat thermometer is a must. We split the one large lamb chop (or was it lamb steak? I would definitely make this recipe again. I think it would go well with regular steak, or maybe even chicken too. Polenta is such a versatile food. If you don&#8217;t like polenta, or had the polenta in the microwave been a complete disaster, the backup plan was to use couscous. A lot of the fluids had baked off and I wished there was more sauce on it.
