Put shredded carrots in a bowl, mix the rest of the ingredients in a small bowl and pour over carrots. Gently toss. Taste and adjust with salt, pepper and extra vinegar and oil, if needed.<\/span><\/p>\n<p><span style=\"color: #000080;\">2. You can serve right away, or chill before serving. Beware that the carrots will start losing their crispness if you let it sit to long in the vinaigrette.<\/span><\/p><\/blockquote>\n<p>&nbsp;<\/p>\n<p><a href=\"http:\/\/www.110pounds.com\/wp-content\/uploads\/2011\/11\/IMG_2339.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-26080\" title=\"IMG_2339\" src=\"http:\/\/www.110pounds.com\/wp-content\/uploads\/2011\/11\/IMG_2339-300x225.jpg\" alt=\"\" width=\"300\" height=\"225\" srcset=\"https:\/\/www.110pounds.com\/wp-content\/uploads\/2011\/11\/IMG_2339-300x225.jpg 300w, https:\/\/www.110pounds.com\/wp-content\/uploads\/2011\/11\/IMG_2339-1024x768.jpg 1024w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p>The shredding of the carrots was dangerous. \ud83d\ude09 Michael watched me do it and he decided I was going to slice off my hand so he tried (and then cut himself). I resumed the shredding. The original recipe writer suggested using a food processor.<\/p>\n<p><a href=\"http:\/\/www.110pounds.com\/wp-content\/uploads\/2011\/11\/IMG_2341.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-26084\" title=\"IMG_2341\" src=\"http:\/\/www.110pounds.com\/wp-content\/uploads\/2011\/11\/IMG_2341-225x300.jpg\" alt=\"\" width=\"225\" height=\"300\" srcset=\"https:\/\/www.110pounds.com\/wp-content\/uploads\/2011\/11\/IMG_2341-225x300.jpg 225w, https:\/\/www.110pounds.com\/wp-content\/uploads\/2011\/11\/IMG_2341-768x1024.jpg 768w\" sizes=\"(max-width: 225px) 100vw, 225px\" \/><\/a><br \/>\nThe dressing was easy to make. It smelled delicious!<\/p>\n<p><a href=\"http:\/\/www.110pounds.com\/wp-content\/uploads\/2011\/11\/IMG_2336.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-26074\" title=\"IMG_2336\" src=\"http:\/\/www.110pounds.com\/wp-content\/uploads\/2011\/11\/IMG_2336-225x300.jpg\" alt=\"\" width=\"225\" height=\"300\" srcset=\"https:\/\/www.110pounds.com\/wp-content\/uploads\/2011\/11\/IMG_2336-225x300.jpg 225w, https:\/\/www.110pounds.com\/wp-content\/uploads\/2011\/11\/IMG_2336-768x1024.jpg 768w\" sizes=\"(max-width: 225px) 100vw, 225px\" \/><\/a><\/p>\n<p>I really enjoyed this salad. It was super easy to make as a side dish with dinner and made in larger\u00a0quantities\u00a0it would be a nice potluck salad. Michael was skeptical that the garlic and carrots would go together but I felt like they complimented each other nicely. The sweetness of the carrots and balsamic was balanced out with tartness of garlic and mustard.<\/p>\n<p><a href=\"http:\/\/www.110pounds.com\/wp-content\/uploads\/2011\/11\/IMG_2344.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-26090\" title=\"IMG_2344\" src=\"http:\/\/www.110pounds.com\/wp-content\/uploads\/2011\/11\/IMG_2344-300x225.jpg\" alt=\"\" width=\"300\" height=\"225\" srcset=\"https:\/\/www.110pounds.com\/wp-content\/uploads\/2011\/11\/IMG_2344-300x225.jpg 300w, https:\/\/www.110pounds.com\/wp-content\/uploads\/2011\/11\/IMG_2344-1024x768.jpg 1024w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p>The only change I&#8217;d make: I&#8217;d use bigger carrots next time. I used 4 carrots like the recipe called for but the carrots were fairly small.
