It was good, but it needs some tweaking and maybe some of my readers can help me figure out what to do different next time. I was trying to find an easy recipe with the ingredients I had on hand and was coming up empty. Most of the salmon recipes I wanted to try needed ingredients I didn&#8217;t have. Usually I always have lemons and limes but this week I was just out of everything. I found <a href=\"http:\/\/allrecipes.com\/recipe\/delicious-feta-crusted-salmon\/detail.aspx\">this recipe<\/a> and the reviews were so good, I had to try it.<\/p>\n<p>[amd-zlrecipe-recipe:33]<\/p>\n<p>I kind of eye-balled the ingredients. I measured them but not exactly and added things to taste. \u00a0I used half of the light mayo and half of the regular mayo, but everything else I followed pretty closely.<\/p>\n<p><a href=\"http:\/\/www.110pounds.com\/wp-content\/uploads\/2012\/05\/IMG_6367.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-31112\" title=\"IMG_6367\" src=\"http:\/\/www.110pounds.com\/wp-content\/uploads\/2012\/05\/IMG_6367-300x200.jpg\" alt=\"\" width=\"300\" height=\"200\" srcset=\"https:\/\/www.110pounds.com\/wp-content\/uploads\/2012\/05\/IMG_6367-300x200.jpg 300w, https:\/\/www.110pounds.com\/wp-content\/uploads\/2012\/05\/IMG_6367-1024x682.jpg 1024w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p>I disagreed with the recipe instructions saying to bake the salmon at 400 degrees for over 30 minutes. In my opinion, that&#8217;s the quickest way to ruin salmon. The &#8220;happy&#8221; spot for baked salmon for me is usually 18-20 minutes tops and then it starts to dry out. I baked it at 350 degrees (which is what I normally do for salmon.)<\/p>\n<p><a href=\"http:\/\/www.110pounds.com\/wp-content\/uploads\/2012\/05\/IMG_6368.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-31113\" title=\"IMG_6368\" src=\"http:\/\/www.110pounds.com\/wp-content\/uploads\/2012\/05\/IMG_6368-300x200.jpg\" alt=\"\" width=\"300\" height=\"200\" srcset=\"https:\/\/www.110pounds.com\/wp-content\/uploads\/2012\/05\/IMG_6368-300x200.jpg 300w, https:\/\/www.110pounds.com\/wp-content\/uploads\/2012\/05\/IMG_6368-1024x682.jpg 1024w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p>I seasoned the salmon fillets (2 not 8) with freshly ground pepper and then mixed the ingredients together in a bowl&#8211;again, tasting and adding more ingredients as I mixed it.<\/p>\n<p><a href=\"http:\/\/www.110pounds.com\/wp-content\/uploads\/2012\/05\/IMG_6370.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-31114\" title=\"IMG_6370\" src=\"http:\/\/www.110pounds.com\/wp-content\/uploads\/2012\/05\/IMG_6370-300x200.jpg\" alt=\"\" width=\"300\" height=\"200\" srcset=\"https:\/\/www.110pounds.com\/wp-content\/uploads\/2012\/05\/IMG_6370-300x200.jpg 300w, https:\/\/www.110pounds.com\/wp-content\/uploads\/2012\/05\/IMG_6370-1024x682.jpg 1024w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p>The mixture smelled and tasted delightful. The feta really came through the other flavors.<\/p>\n<p><a href=\"http:\/\/www.110pounds.com\/wp-content\/uploads\/2012\/05\/IMG_6371.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-31115\" title=\"IMG_6371\" src=\"http:\/\/www.110pounds.com\/wp-content\/uploads\/2012\/05\/IMG_6371-300x200.jpg\" alt=\"\" width=\"300\" height=\"200\" srcset=\"https:\/\/www.110pounds.com\/wp-content\/uploads\/2012\/05\/IMG_6371-300x200.jpg 300w, https:\/\/www.110pounds.com\/wp-content\/uploads\/2012\/05\/IMG_6371-1024x682.jpg 1024w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p>I spread it evenly on the salmon and then topped it with the bread crumbs. And this is where I need some help from readers.<\/p>\n<p><a href=\"http:\/\/www.110pounds.com\/wp-content\/uploads\/2012\/05\/IMG_6372.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-31116\" title=\"IMG_6372\" src=\"http:\/\/www.110pounds.com\/wp-content\/uploads\/2012\/05\/IMG_6372-300x200.jpg\" alt=\"\" width=\"300\" height=\"200\" srcset=\"https:\/\/www.110pounds.com\/wp-content\/uploads\/2012\/05\/IMG_6372-300x200.jpg 300w, https:\/\/www.110pounds.com\/wp-content\/uploads\/2012\/05\/IMG_6372-1024x682.jpg 1024w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p>Unfortunately, the feta mixture didn&#8217;t really change texture. I guess I thought it would be cooked a little bit? And the breadcrumbs did not get crunchy like I thought they would. I was disappointed with that. I wanted the topping a little crispy.<\/p>\n<p><a href=\"http:\/\/www.110pounds.com\/wp-content\/uploads\/2012\/05\/IMG_6376.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-31118\" title=\"IMG_6376\" src=\"http:\/\/www.110pounds.com\/wp-content\/uploads\/2012\/05\/IMG_6376-300x200.jpg\" alt=\"\" width=\"300\" height=\"200\" srcset=\"https:\/\/www.110pounds.com\/wp-content\/uploads\/2012\/05\/IMG_6376-300x200.jpg 300w, https:\/\/www.110pounds.com\/wp-content\/uploads\/2012\/05\/IMG_6376-1024x682.jpg 1024w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p>The meal wasn&#8217;t BAD, I just wanted it to be crispy. So what did I do wrong? Should I have broiled it for the last minute or two? Turned up the temperature to 400 instead of 350?<\/p>\n<p><a href=\"http:\/\/www.110pounds.com\/wp-content\/uploads\/2012\/05\/IMG_6375.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-31117\" title=\"IMG_6375\" src=\"http:\/\/www.110pounds.com\/wp-content\/uploads\/2012\/05\/IMG_6375-300x200.jpg\" alt=\"\" width=\"300\" height=\"200\" srcset=\"https:\/\/www.110pounds.com\/wp-content\/uploads\/2012\/05\/IMG_6375-300x200.jpg 300w, https:\/\/www.110pounds.com\/wp-content\/uploads\/2012\/05\/IMG_6375-1024x682.jpg 1024w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p>Despite not being crunchy, the flavors were good, the feta was awesome. I steamed broccoli to go with the fish and had a side salad. Dinner was around 700 calories total.<\/p>\n<p><a href=\"http:\/\/www.110pounds.com\/wp-content\/uploads\/2012\/05\/IMG_6381.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-31121\" title=\"IMG_6381\" src=\"http:\/\/www.110pounds.com\/wp-content\/uploads\/2012\/05\/IMG_6381-300x200.jpg\" alt=\"\" width=\"300\" height=\"200\" srcset=\"https:\/\/www.110pounds.com\/wp-content\/uploads\/2012\/05\/IMG_6381-300x200.jpg 300w, https:\/\/www.110pounds.com\/wp-content\/uploads\/2012\/05\/IMG_6381-1024x682.jpg 1024w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p>I enjoyed a small bowl of Breyer&#8217;s natural vanilla bean ice cream with some of the <a href=\"http:\/\/www.waxorchards.com\/\">Wax Orchards<\/a> fudge sauce.
