I&#8217;m going to share some keto dinners and recipes that we&#8217;ve done lately because honestly the rotation of breakfasts and lunches don&#8217;t change all that much! But I am trying to try new things with dinners to get some variety.<\/p>\n<p>Apparently the theme for this post is Alfredo!<\/p>\n<h4><span style=\"text-decoration: underline;\"><strong>Recipe #1<\/strong><\/span><\/h4>\n<p>We made this and it was really delicious! I had the leftover chicken thigh and some sauce for lunch the next day and it was even better as a leftover. We used chicken thighs instead chicken breasts and raw minced garlic instead of garlic powder.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-56602\" src=\"http:\/\/www.110pounds.com\/wp-content\/uploads\/2019\/02\/IMG_1991-e1550721176185.jpg\" alt=\"\" width=\"480\" height=\"640\" srcset=\"https:\/\/www.110pounds.com\/wp-content\/uploads\/2019\/02\/IMG_1991-e1550721176185.jpg 480w, https:\/\/www.110pounds.com\/wp-content\/uploads\/2019\/02\/IMG_1991-e1550721176185-225x300.jpg 225w\" sizes=\"(max-width: 480px) 100vw, 480px\" \/><\/p>\n<p><span style=\"text-decoration: underline;\"><strong><a href=\"https:\/\/therecipecritic.com\/creamy-tuscan-garlic-chicken\/\">Creamy Tuscan Garlic Chicken<\/a><\/strong><\/span><\/p>\n<div class=\"ERSIngredientsHeader ERSHeading\">Ingredients<\/div>\n<ul>\n<li class=\"ingredient\">Chicken Breasts<\/li>\n<li class=\"ingredient\">2 Tablespoons olive oil<\/li>\n<li class=\"ingredient\">1 cup heavy cream<\/li>\n<li class=\"ingredient\">\u00bd cup chicken broth<\/li>\n<li class=\"ingredient\">1 teaspoon garlic powder<\/li>\n<li class=\"ingredient\">1 teaspoon italian seasoning<\/li>\n<li class=\"ingredient\">\u00bd cup parmesan cheese<\/li>\n<li class=\"ingredient\">1 cup spinach, chopped<\/li>\n<li class=\"ingredient\">\u00bd cup sun dried tomatoes<\/li>\n<\/ul>\n<div class=\"ERSInstructionsHeader ERSHeading\">Instructions<\/div>\n<ol>\n<li class=\"instruction\">In a\u00a0large skillet\u00a0add olive oil and cook the chicken on medium high heat for 3-5 minutes on each side or until brown on each side and cooked until no longer pink in center. Remove chicken and set aside on a plate.<\/li>\n<li class=\"instruction\">Add the heavy cream, chicken broth, garlic powder, italian seasoning, and parmesan cheese. Whisk over medium high heat until it starts to thicken. Add the spinach and sundried tomatoes and let it simmer until the spinach starts to wilt. For this one we used boneless, skinless chicken thighs (frozen). The alfredo sauce was REALLY tasty! I liked it a lot. I&#8217;ve never made alfredo from scratch before, I&#8217;ve always just used a jar. It was so much better than the store bought stuff. I topped it with some fresh parsley. And you totally did not miss not having pasta. The broccoli was great with it. I had the leftover chicken and alfredo sauce the next day for lunch and the sauce flavor was even richer.<\/p>\n<p><span style=\"text-decoration: underline;\"><strong><a href=\"https:\/\/thatlowcarblife.com\/low-carb-alfredo-sauce\/\">Low Carb Chicken and Broccoli Alfredo<\/a><\/strong><\/span><\/p>\n<p class=\"mv-create-ingredients-title mv-create-title-secondary\">Ingredients<\/p>\n<ul>\n<li>1 pound thin sliced chicken breasts<\/li>\n<li>\u00bd teaspoon salt<\/li>\n<li>\u00bd teaspoon ground pepper<\/li>\n<li>\u00bd teaspoon paprika<\/li>\n<li>\u00bd teaspoon garlic powder<\/li>\n<li>1 tablespoon avocado oil<\/li>\n<li>16 ounces broccoli<\/li>\n<li>1\/2 cup heavy whipping cream<\/li>\n<li>1\/4 cup butter<\/li>\n<li>1 teaspoon minced garlic<\/li>\n<li>1 cup shredded Parmesan<\/li>\n<\/ul>\n<p class=\"mv-create-instructions-title mv-create-title-secondary\">Instructions<\/p>\n<ol>\n<li>Sprinkle the salt, pepper, paprika, and garlic powder evenly over both sides of the chicken.<\/li>\n<li>Heat a large skillet over medium heat and add the oil.<\/li>\n<li>When oil is hot, add the chicken breasts and cook 5 minutes on each side or until chicken is cooked through.<\/li>\n<li>While chicken is cooking, steam the broccoli on the stove or in the microwave until as tender as you&#8217;d like.<\/li>\n<li>Heat a sauce pan over medium heat and add the cream, butter, garlic, salt, and pepper. Whisk constantly until the butter is melted and the mixture comes to a slow simmer.<\/li>\n<li>Remove from the heat and stir in the shredded Parmesan. Whisk until the cheese melts fully and the sauce is smooth.<\/li>\n<li>To serve, divide the broccoli between four plates and top with chicken. But still super good and I wanted to share my creation. \ud83d\ude42 Michael created my vision. Zoodles (three smallish zucchinis) saut\u00e9ed in oil. Then scallops (frozen from Costco defrosted), seared and seasoned with salt and pepper. Alfredo sauce. This time we used the stuff from the jar because we needed a quick Monday night meal. Definitely not as good as the other two homemade Alfredo sauces but still decent and like I said, good for a quickie meal. Then topped with crumbled bacon! Season with freshly ground pepper. It was really good! And definitely keto.<\/p>\n<p>We were originally going to use shrimp in this recipe but I discovered last minute that we were out of frozen shrimp. So thankfully we had some scallops.
