Rain rain rain! Downpour, actually! I guess summer is officially over in Portland&#8230;So making something cozy for dinner was a must.<\/p>\n\n\n\n<p>I&#8217;d been saving this recipe for awhile and finally tried it. And it&#8217;s a winner!<\/p>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"aligncenter\"><img loading=\"lazy\" decoding=\"async\" width=\"478\" height=\"640\" src=\"http:\/\/www.110pounds.com\/wp-content\/uploads\/2019\/09\/IMG_5357.jpg\" alt=\"\" class=\"wp-image-57461\" srcset=\"https:\/\/www.110pounds.com\/wp-content\/uploads\/2019\/09\/IMG_5357.jpg 478w, https:\/\/www.110pounds.com\/wp-content\/uploads\/2019\/09\/IMG_5357-224x300.jpg 224w\" sizes=\"(max-width: 478px) 100vw, 478px\" \/><\/figure><\/div>\n\n\n\n<h1 class=\"wp-block-heading\"><a href=\"https:\/\/www.eatwell101.com\/french-onion-chicken-casserole-recipe\"><strong>FRENCH ONION CHICKEN CASSEROLE<\/strong><\/a><\/h1>\n\n\n\n<p style=\"text-align:left\">Ingredients:<\/p>\n\n\n\n<ul><li>3 boneless, skinless chicken breasts<\/li><li>1 or 2 teaspoons&nbsp;garlic powder<\/li><li>1&nbsp;teaspoon&nbsp;dried oregano<\/li><li>Red crushed&nbsp;chili&nbsp;pepper flakes, optional<\/li><li>Pinch&nbsp;of salt and&nbsp;fresh cracked pepper<\/li><li>1&nbsp;cup&nbsp;shredded mozzarella cheese (or Gruyere)<\/li><li>2 to 3 tablespoons&nbsp;unsalted butter<\/li><li>5 large onions, thinly sliced<\/li><li>3&nbsp;cloves&nbsp;garlic, minced<\/li><li>1\/4 to 1\/2 cup&nbsp;chicken broth<\/li><li>Fresh chopped parsley, for garnish<\/li><\/ul>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"ins\">DIRECTIONS<\/h2>\n\n\n\n<p><strong>1.<\/strong>&nbsp;To make the chicken casserole: Preheat your oven to 400\u00b0F (200\u00b0C).&nbsp;Lightly grease a 9\u00d712-inch baking dish and set aside.<\/p>\n\n\n\n<p><strong>2.<\/strong>&nbsp;Melt butter in a large skillet over medium-high heat. Add onions and season with salt and pepper. Cook for 5-8 minutes until soft.<\/p>\n\n\n\n<p><strong>3.<\/strong>&nbsp;Reduce heat to medium and cook, stirring occasionally, until onions are caramelized \u2013 about 15 minutes. Pour in 1\/4 cup of broth to deglaze if your pan gets too dry, and keep stirring until onions are browned.&nbsp;<\/p>\n\n\n\n<p><strong>4.<\/strong>&nbsp;Stir in fresh minced garlic and cook until fragrant, about 1 minute. Turn off the heat and allow to cool slightly.<\/p>\n\n\n\n<p><strong>5.<\/strong>&nbsp;Season chicken breasts with oregano, crushed chili pepper flakes, salt,&nbsp;pepper, and garlic&nbsp;powder. Go easy on the salt because&nbsp;French onion and cheese&nbsp;are already salted. Arrange chicken breasts in the baking&nbsp;dish.&nbsp;<\/p>\n\n\n\n<p><strong>6.<\/strong>&nbsp;Divide caramelized onions on top of each chicken breast. Sprinkle shredded cheese on top and bake for 20-25 minutes in the oven (or more, depending on the thickness of your chicken breasts), until fully cooked and cheese is bubbly. Then&nbsp;broil for 2 minutes to crisp up the cheese.&nbsp;Garnish the&nbsp;<strong>French&nbsp;onion chicken casserole<\/strong>&nbsp;with fresh chopped parsley and serve immediately with steamed vegetables or cauliflower rice. Enjoy!<\/p>\n\n\n\n<p><strong>Notes:<\/strong><\/p>\n\n\n\n<ul><li>You can prepare the caramelized onion ahead&nbsp;of time, and just assemble the casserole at the last minute before baking.<\/li><li>You can flavor up the french onion with a dash of white wine, sherry or balsamic&nbsp;vinegar to deglaze the pan.<\/li><li>The cooking time will depend on the thickness&nbsp;of your chicken&nbsp;breasts.<\/li><li>Go easy on the salt because&nbsp;French onion and cheese&nbsp;are already salty.<\/li><\/ul>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"aligncenter\"><img loading=\"lazy\" decoding=\"async\" width=\"480\" height=\"640\" src=\"http:\/\/www.110pounds.com\/wp-content\/uploads\/2019\/09\/IMG_5353-e1568600417805.jpg\" alt=\"\" class=\"wp-image-57464\" srcset=\"https:\/\/www.110pounds.com\/wp-content\/uploads\/2019\/09\/IMG_5353-e1568600417805.jpg 480w, https:\/\/www.110pounds.com\/wp-content\/uploads\/2019\/09\/IMG_5353-e1568600417805-225x300.jpg 225w\" sizes=\"(max-width: 480px) 100vw, 480px\" \/><\/figure><\/div>\n\n\n\n<p>I caramelized the onions in butter and 1\/4 cup white wine (the good stuff, too!) instead of chicken broth. I used a mixture of mozzarella and gruyere but used more gruyere then the mozzarella. <\/p>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"aligncenter\"><img loading=\"lazy\" decoding=\"async\" width=\"480\" height=\"640\" src=\"http:\/\/www.110pounds.com\/wp-content\/uploads\/2019\/09\/IMG_5354-e1568600436152.jpg\" alt=\"\" class=\"wp-image-57463\" srcset=\"https:\/\/www.110pounds.com\/wp-content\/uploads\/2019\/09\/IMG_5354-e1568600436152.jpg 480w, https:\/\/www.110pounds.com\/wp-content\/uploads\/2019\/09\/IMG_5354-e1568600436152-225x300.jpg 225w\" sizes=\"(max-width: 480px) 100vw, 480px\" \/><\/figure><\/div>\n\n\n\n<p>It turned out GREAT! Michael and I both loved it and wouldn&#8217;t change a thing! Delicious dinner! I will definitely make this again!
