{"id":9323,"date":"2010-11-29T08:52:38","date_gmt":"2010-11-29T16:52:38","guid":{"rendered":"http:\/\/www.110pounds.com\/?p=9323"},"modified":"2010-11-29T08:52:38","modified_gmt":"2010-11-29T16:52:38","slug":"almond-encrusted-salmon-and-sweet-squash","status":"publish","type":"post","link":"https:\/\/www.110pounds.com\/?p=9323","title":{"rendered":"Almond Encrusted Salmon and Sweet Squash"},"content":{"rendered":"<p>I made another recipe from &#8220;The Real Food Diet Cookbook.&#8221;<\/p>\n<blockquote><p><span style=\"color: #000080;\">Recipe:<\/span><\/p>\n<p><span style=\"text-decoration: underline;\"><strong><span style=\"color: #000080;\">Almond Encrusted Salmon<\/span><\/strong><\/span><\/p>\n<p><span style=\"color: #000080;\">1\/2 cup almonds<\/span><\/p>\n<p><span style=\"color: #000080;\">2 Tablespoons parsley<\/span><\/p>\n<p><span style=\"color: #000080;\">1 Tablespoon grated lemon zest<\/span><\/p>\n<p><span style=\"color: #000080;\">1 teaspoon sea salt and pepper<\/span><\/p>\n<p><span style=\"color: #000080;\">4 wild caught salmon fillets<\/span><\/p>\n<p><span style=\"color: #000080;\">2 Tablespoons grapeseed oil<\/span><\/p>\n<p><span style=\"color: #000080;\">4 cups spinach<\/span><\/p>\n<p><span style=\"color: #000080;\">Directions:<\/span><\/p>\n<p><span style=\"color: #000080;\">1. Grind almonds in a coffee grinder or food processor. Mix almond powder, parsley, lemon zest, sea salt and pepper together on a plate.<\/span><\/p>\n<p><span style=\"color: #000080;\">2. Dredge salmon on both sides through the almond mixture.<\/span><\/p>\n<p><span style=\"color: #000080;\">3. Heat oil in large skillet over medium heat. Add salmon and cook for 5 minutes on each side until cooked thoroughly.<\/span><\/p>\n<p><span style=\"color: #000080;\">4. Serve over bed of greens and top with fresh lemon juice.<\/span><\/p><\/blockquote>\n<p>I followed the directions except I didn&#8217;t make a spinach salad to go with it. Not eating&#8211;but preparing it. It&#8217;s not something I&#8217;ve done very much and I was usually helping someone ELSE prepare it. They did all the hard work. I tried to do it myself this time but Michael stopped me and said I was going to kill myself trying to cut the squash (probably a fair assessment) so he took over and cut it.<\/p>\n<p><a href=\"http:\/\/www.110pounds.com\/wp-content\/uploads\/2010\/11\/IMG_3970.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-9515\" title=\"IMG_3970\" src=\"http:\/\/www.110pounds.com\/wp-content\/uploads\/2010\/11\/IMG_3970-300x225.jpg\" alt=\"\" width=\"300\" height=\"225\" srcset=\"https:\/\/www.110pounds.com\/wp-content\/uploads\/2010\/11\/IMG_3970-300x225.jpg 300w, https:\/\/www.110pounds.com\/wp-content\/uploads\/2010\/11\/IMG_3970-1024x768.jpg 1024w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/a>I started the squash early because I knew it would take at least an hour to bake. I scooped out the guts and then put the squash face down in some water. Oh well! There was extra coating left over and I just threw it away since I couldn&#8217;t save it. I scraped the all the squash out and there were three servings. I saved one serving for lunch. I topped the squash with a little butter and some pepper. Squash is such a super food. It&#8217;s packed with nutrients, fills my stomach up more than carbs, and it&#8217;s low calorie. It was crunchy, not soggy in any way, and flavorful. The flavors I tasted mostly were the lemon zest and the salt. The salt was a tad overpowering but perhaps because it was sea salt? The flavors were bold without being too much.The salmon came out moist without being mushy. Michael&#8217;s opinion on the salmon was that it wasn&#8217;t as good as the blackened salmon he makes.
