I love sweet potatoes. Why it took me so long to start eating baked sweet potatoes instead of a regular baked potato is beyond me. It’s also beyond me why we never tried to make our own sweet potato fries.
The recipe is simple:
- Peel and slice sweet potatoes
- Coat with olive oil (we used Grapeseed Oil)
- Sprinkle on salt, pepper, garlic powder and paprika
- Place on tray lined with parchment paper
- Bake at 450 degrees for 10-20 minutes, checking often
The recipe I found online was for 5 sweet potatoes. We only had two so we improvised.
Michael was in charge of the cutting 😉 I was in charge of the drinks.
I like the Grapeseed Oil much better than regular olive oil. I think the flavor is richer.
I will admit, too, that Michael was much more coordinated when it came to tossing the potatoes to coat them. I attempted it and was a total spaz. SIGH.
He tossed the potatoes after we added each spice to make sure they were evenly coated.
Next I placed them evenly on the parchment paper and put them in the oven.
While the fries were baking, we got the rest of dinner ready. We have so many Boca Burgers in our freezer it’s not even funny. Seriously, who wants to come and take some?? Thankfully we did have room for our Turkey that we bought yesterday. We were worried it wouldn’t fit.
Michael was in charge of cooking the Boca Burgers and I got the buns ready: light mayo, sweet mustard, lettuce, pickles. He added mushrooms and jalapenos to the top of his burger. Mine was just cheese and jalapenos. By that time the fries were more than ready.
They smelled so yummy! They were a little on the soft side but that was okay because they tasted so amazing.
Even though Boca Burgers aren’t my favorite (they don’t have much flavor), dinner was fantastic! The burgers were good. The fries were sweet and heavenly.
Words cannot describe how divine those fries were. I loved how they weren’t crunchy, honestly. This is my new favorite addiction. I can’t believe we never tried this before!
The fries were so good on their own, I really didn’t need ketchup, either. Which is a very strange occurrence, trust me!
And with any addiction…..I want more and more!
