Hmm….that sounds naughty, doesn’t it? Well it’s not nearly as naughty as it implies…. 😉
Michael went to go play golf with a buddy Thursday night so I had the whole house to myself. I’d left work early for a dentist appointment and it didn’t take too long. I went swimming even though I usually prefer to go on Friday nights. The pool was insanely crowded and it wasn’t a very enjoyable workout. Oh well. On a side note, I’m so glad everyone liked my last post on Lap Swimming Etiquette!
When I lived on my own, I ate a lot of salads for dinner. A quickie salad loaded with lots of fresh veggies and some protein (grilled chicken or salmon) is an excellent dinner. And healthy! I ate a lot of salads on my own. On nights when Michael wants to go play with the boys, I usually default to the usual: salad. This particular salad is something I’ve written about on my blog before. First, I cook Quinoa. This time I used the Inca Red Quinoa. I had some leftover Chicken Broth from the Pork Chop recipe we did the other night. I used that instead of water to cook the quinoa.
