That salad looks so good! I wish I didn’t have oral allergy syndrome. So many of those veggies, I wouldn’t be able to eat raw. I would’ve ended up cooking the peppers and omitting the carrots (so no coleslaw mix for me). But that does look super duper tasty and filling.

Do you and Michael usually prepare dinner together? That seems like a nice idea for some couple time.

Yes we usually prepare dinner together. Michael does the bulk of the cooking but we do it together. I usually prep.

You made my favorite salad!!! I could seriously eat that for EVERY meal. Yummo!! But I never have tried it with Cole Slaw. I am sure that adds a unique element to it. May have to try it out.

Ohhh that salad looks awesome! I would love the exact same one, minus the chicken and maybe more beans for extra protein. I love doing mexican themed salads, or recently i’ve been into buffalo style salads. Today I had leftover buffalo tofu with blue cheese crumbles and celery over greens and it was awesome!

      Buffalo salad sounds good too!

Omigosh that looks DELICIOUS! I make salads kind of like that a lot (I call them taco salads) but I’ve never tried putting a southwest dressing like that on. I bet it would take it from good to great!
