Mmm that sounds like my kind of meal! I normally just roast squash similarly to how you did it. I actually had two extra winter squash that I’ve had for weeks, so last night I roasted and cleaned them, and tonight I’m planning on making a kale and squash pasta bake for dinner tonight and lunch tomorrow! 🙂

This is a great new way to prepare salmon. I’ve just started eating it again and need new and interesting ways to prepare it.

As for squash, I always put yellow squash in stews. I’ve never tried the kind you show in your post today. I might though.
