I’m a big fan of breakfast for dinner – something like a simple omelet. Sometimes I do a simple tortilla pizza or pull a single serving of frozen soup out of the freezer.

I love breakfast for dinner too! I’ve done egg dishes for dinner–like frittatas. Those are nice.

Eric and I actually have what we’ve been told is an unusual arrangement. We rarely ever eat the same meal (usually only the occasional special date night in) and never eat at the same time. Our eating habits are so vastly different that I can’t wait to eat when he’s ready to eat and he isn’t hungry when I’m starving. This means that I pretty much always cook for one, and I’ve learned a ton of tricks along the way.

Breakfast for dinner (in the form of egg scrambles/omelettes) is my staple. πŸ™‚

Breakfast for dinner seems to be the popular answer. Now I’m craving french toast…

Luckily Michael and I are pretty similar in our eating habits and times. I would miss not sharing a meal with him.

I am horrible when I eat alone about just random throwing things together. Today I had breakfast alone. I had a string cheese, and a tuna sandwich. If I had any fresh mushrooms and spinach, I would have added those to some scrambled eggs. Cottage cheese! I haven’t had that in months! Guess I should pick some up. πŸ™‚
