    I learned this lesson early. Congrats on getting back into the groove. I use to waste so much money on produce that went bad in my fridge. I started prepping my veggies as soon as I got home from the grocery store. It saves me so much time during the week and we’re more likely to eat at home rather than go out. I’m also cooking chicken breasts and lean hamburger patties ahead of time. That way we have no excuse of being too busy to make our meals.

    Great job adding veggies back into your diet!

    I have learned over the years that the only way we all eat enough veggies is if I prep them ahead of time. Now I spend several hours no Sundays prepping and cooking meals. I always cut some up to eat raw, make a veggie soup, roast some, and make a quick stir fry. We also start most days with a very green smoothie (a bag of spinach or other greens between the three of us).

    I made your egg muffins today and my picky kid even ate one! I made a batch with broc/cheese and another with mushrooms/asparagus tips/cheese. Great idea for a quick meal.
