    I love making a similar salad with couscous – take 2 cups cooked whole wheat couscous that is cooled, add chopped tomato, cucumber, and a can of chickpeas drained a rinsed, then add in red wine vinegar, salt, and pepper and mix it all up. Cover and set it the fridge until ready to eat… it is SO good!

      Beth that sounds delicious! I will have to try that next time. I was at a loss as to what “sauce” to use for it. Mmm sounds wonderful!

    Have you been watching Top Chef Masters? I have two episodes on my DVR I need to watch over the weekend.

    I love quinoa too – took me a while to find it though since Whole Foods isn’t too close!
