That look delicious! I’ve got an acorn squash on my counter now. I think this is what I’ll make with it.

You should! It was really really good. I’m already planning other recipes to try stuffing squash with yummy things. 😉

I LOVE stuffing squash! I filled one with leftover chili the other day. So good. I have also often used quinoa and lentils.

I really want to try quinoa and sausage next time.

I eat squash all year long (at least monthly) and more often around this time of year. I eat walnuts almost everyday. I just don’t put the two together. A Pumpkin latte doesn’t sound good to me, but a pumpkin milkshake sounds very good:) Is there a pumpkin beer in your area?

Surprisingly I am not a fan of pumpkin beer. I don’t know why….

Oregon and Washington have a fast food place called Burgerville (which uses better quality of ingredients than most fast food places) and they make AMAZING milkshakes. The pumpkin milkshake is to die for. Of course it’s about half my day’s worth of calories…..

I don’t understand the pumpkin thing. In NZ pumpkin is a savory food, not a sweet one. We roast it and serve it with potato and kumura (kinda like sweet potato) alongside roast meat. Putting it in sweet things is very odd to me!

Interesting! I do like sweet pumpkin–pumpkin bread and pie. But I also like it savory too. I don’t have it savory very often.

haha I love the rant about pumpkin lattes. I don’t get it either, they’re good but not tweet about it in August good. Also, what happened to fall starting in late September?

    1. Lisa Eirene

I know! Sorry about the rant. But seriously…I was on vacation in Hawaii at the end of August, enjoying the sun and summer and people were tweeting about pumpkin recipes and pumpkin spice lattes and I kept thinking…”it’s NOT FALL YET!!!” Stop! 😉

I like pumpkin but in very limited quantities. I’ll usually get one pumpkin spice latte (or other “fall” drink) once per year. Makes it a fun seasonal treat for me but not something I want frequently!

I like that…one treat per year. I could handle that.
