    I don’t eat overnight oats, though I have made packets to send to Princess in college. I do make my breakfast the night before, though, because mornings are just too tight, time-wise, and I rest easier when I know I’m all set for the next day. My go-to breakfast is vanilla Greek yogurt mixed with cocoa powder and coconut. Then I dust a sliced apple with 1 TBSP of PB2, and, after it sits all night it makes a nice peanut buttery coating. Those 2 things make a nice filling breakfast for me, and I like it enough to eat every work day, so, no thinking! That’s the best part, not having to think 🙂

    I do the 1-minute muffin when I am in a hurry.
    It’s just 1/4 cup flax meal (26 grams)
    1/4 tsp baking powder
    1 tsp cinnamon
    1 egg
    1 tbsp of applesauce (or pumpkin)

    Mix all really well and put in a microwave safe small dish or silicone muffin cup and microwave for 1 to 1/2 minutes. You can top with nut butter or anything else to sweeten it up. It’s very filling because of all the fiber!

    I need to get back on the overnight oats thing. I haven’t tried it with greek yogurt. I like to heat up the overnight oats so I wonder if the yogurt will make the texture a little weird? I’ll let you know!

      Yes let me know. I’ve yet to try the overnight oats in the crockpot. I planned on doing it and then…got busy. But I want to try it.
