    I love the idea of this recipe and I think the changes you said would be good ones. Zucchini and eggplant both are such watery veggies, that I’m not that surprised it was so messy! I wonder if you bake the eggplant and zucchini slices first and then create the casserole if that would have solved the problem to remove the moisture beforehand… hmm!

      It was a tasty recipe but way too messy. I was glad we hadn’t invited friends over for dinner because it certainly wasn’t ATTRACTIVE to eat!

    It actually looks tasty to me! But I like cheesy, oozy goodness. I like the suggestions you made too. Do you think if you layered it with a little ricotta (mix an egg white in with the ricotta first), it would bind the ingredients together?

    Your ice cream looks delish as well!
