Spring

No Green Beer

Did you had a good St. Patty’s Day? We had a pretty good day.

I’d been sick all week off and on, with what I thought was food poisoning (came home sick on Thursday) but it lasted too long to be food poisoning. I called the advice nurse and she said that there was a stomach bug going around. Lucky me! But by Saturday night I was feeling a lot better.

We decided to go out to an early dinner at Tabor Tavern on SE Burnside. I’d never been but Michael found some good reviews online and we were both craving burgers. And they said they were kid friendly!

There were a ton of families with little kids there. That was a good sign!

We arrived at 5:15 (PARTY ANIMALS) and the place was packed! We thought we were being smart by getting there early. Oh well. I guess other people had the same idea–avoid the St. Patty’s Day crowd!

I was happy to see they have my favorite beer on tap! Always a good sign. And NO GREEN BEER!!

We got the Brussels Sprouts appetizer. It had bacon and lemon zest on it. It was delicious!! Logan had a few bites. He does not like Brussels sprouts but he loved the bacon. 😉

We saw a couple at the table next us who had a kid a few years older than Logan. They were SMART–they ordered the kids mac n’ cheese plate first and asked that it come out right away to keep their kid occupied while they waited for their entrees. Pro Move. We took note for next time!

These days Logan lives on mac n’ cheese, grilled cheese and bananas so we ordered him the kids fish n’chips for something different. He had a few bites of the fish but wasn’t a fan. He ate a ton of fries and the peas, so that’s good.

I got the classic burger that had onions, pickles and Russian Dressing and cheese. Michael got the Bleu Cheese burger. I got salad with mine. The burger was tasty but not memorable. Michael agreed. I’d definitely go back, though. It was a cool vibe, the rest of the food was really good (and I had the fish for lunch the next day and it was good!).

On Sunday, I went swimming and did the usual stuff around the house. Then the weather was nice enough after grocery shopping we all went for a walk. Lots of signs of spring! Thank goodness!

For dinner Sunday night, I tried making spaghetti squash in the pressure cooker. I found this recipe and gave it a try.

While the spaghetti squash was cooking, I simmered some sauce with meatballs.

The verdict? Amazing. Game changer. The spaghetti squash was cooked in 8 minutes and it was PERFECT. It shredded into spaghetti noodles like NOTHING. We were both in awe and decided we could have spaghetti squash once a week now because it was SO fast and easy!

Perfect perfect perfect spaghetti squash! Winner!

February Goals

February Goals

Happy February! My big goal for the month? NOT GET THE FLU. Seriously. Like half my office got it and was out for a week or more. Every day I see a new friend on facebook announce they have the flu. Everyone is dropping like dominoes. I really really don’t want to get it. I got a flu shot back in October (so did Logan) but apparently that means nothing this year. I’m just worried about Logan getting it!

So lots of vitamins, EmergenC and not touching anything in public.

Anyways, I do have a few goals I want to accomplish this month.

Squat Challenge.

Squats are a great (and easy) exercise to fit in anywhere, anytime, and it’s a GREAT activity for runners. I decided I wanted to do a squat challenge, do a certain amount of squats every day. I can easily do them at my desk while at work (I have a standing desk) and I already do squats on my weight lifting days, so I just need to add a few more. 🙂

Get Organized.

I have a lot of organizational projects brewing in my head. I’ve been periodically going through stuff at home and donating a lot of things we don’t need anymore, but we still have a tons of clutter and mess that just stresses me out.

I have a bunch of clothes that are looking old and dingy and not all of them fit that great. I’ve been holding on to different sizes because I keep hoping I’ll lose this weight and fit into them again. But perhaps it’s time to just donate some of that and get a few new outfits that fit right now.

I have been going through books and packing up stuff that I don’t need out on the shelves, but I want to keep for awhile. So boxes they go.

I need to go through our file cabinet and get rid of/shred old paperwork we don’t need anymore.

The kitchen pantry is making me mental. The fridge and freezer are a disaster. I need to do this asap!

I’d like to get a new desk for the office. Something smaller and more organized. We don’t really use the office or office computer for too much (I basically just use that computer now for LightRoom photo editing) because I just use my laptop for everything else. So it doesn’t make sense to me to have a huge desk that takes up half the room.

Try Some New Recipes.

We have a pretty basic diet and dinners are about 4-6 different rotations of a protein with salad and veggie but lately I’ve been feeling a little blah about my diet and would like to change things up. I don’t know yet what that means, I might try doing some more vegetarian lunches at work, I might try carb cycling. I haven’t decided yet. I love the Oh She Glows website and have tried a few of her recipes, so I might delve in a little deeper there.
