    Sounds like the perfect weekend to me – half lazy/half productive! For the record, I make my no rise pizza dough (2 cups water, 1 teaspoon yeast, 1 teaspoon flour, 1 cup water) and mix it together and just leave it in the fridge for up to 10 days so I always have pizza dough on hand – it actually tastes better the longer it sits in the fridge. 😀

    We found some good premade dough as well and it’s just easier and pretty much as good as homemade!

    I forgot it was Labor Day because I worked on Monday LOL

    Smitten Kitchen has a terrific easy pizza dough recipe based on Jim Lahey’s no knead recipe. https://smittenkitchen.com/2013/10/lazy-pizza-dough-favorite-margarita-pizza/

    My go to is Mark Bittman’s because I have it memorized! In a food processor combine 3 cups all purpose flour, 2 teaspoons yeast, 2 teaspoons kosher salt and 2 tablespoons olive oil. With the machine running slowly add 1 cup water. Process until it comes together and forms a ball. Shape into a nicer ball and put in an oiled bowl and cover with plastic. Let it rise a few hours before using.

    Often I make the dough after dinner, let it rise for 1-2 hours on the counter and then put it in the fridge to cold ferment overnight.

    We haven’t attempted using a pizza peel and stone. It looks a little out of my coordination level. LOL.
    I use the Pampered Chef cookie pan.
