    I have a question about the Splenda blend – how many calories does it save you? Can you figure out what the mini muffins would have been with all sugar?

      Since I did mini muffins, the calorie count is way different than the original recipe. It saves more calories in “normal” recipes because you use half the amount of sugar the recipe calls for — for example if the recipe calls for 1 cup of sugar, you use 1/2 cup of the splenda blend. For this particular recipe it saved like 10 calories per mini muffin. So not much.

    I am glad you are feeling better. Bronchitis is the worst. I remember when I had it non stop one winter and felt like just walking caused a coughing fit.

    Apples to Apples is a great game and last month we played Loaded Questions with our friends.. hilarious.

    We just did fresh cornbread muffins with cream of corn in them, so darn good and moist because I am with you, cornbread muffins taste so much better with actual corn in it.

      Good idea, I will try creamed corn next time!

      Apples to Apples is great, we have that game. I haven’t tried Loaded Questions but I’ve heard of it.

      Feeling a lot better. Not 100% yet but much better. And yes, there were a few days there where I got winded just walking to my car!
